This micro lot of Colombia coffee variety was cultivated by Julián Hernández at his farm called - Laureles, located in Pitalito - Huila.
Julián as a producer of specialty coffee, knows that a fundamental part of the quality of the coffee is making a good harvesting, for this reason, he only picks the ripe cherries and then pulp them. The fermentation takes place in a tank for 24 to 36 hours. The coffee dries in the sun for 10 to 15 days. The fermentation and drying times are directly related to the climatic and environmental conditions of the area where the coffee is being produced.
Therefore, it is important to know that Pitalito is located in the heart of the Colombian Massif. The Colombian Massif is cataloged by Unesco as a biosphere reserve. Obviously, being located in the massif, makes Pitalito to develop a high agricultural potential and a high environmental responsibility.
