Colombia Chachagüí Blend


Aroma: Soft, honey, yellow fruits, papaya.

Flavor: Soft, hazelnut, milk chocolate, papaya, rapadura sugar.

This blend is made from Caturra and Castillo varieties, and is produced by various coffee growers from the municipality of Chachagüí, between 1,800 and 1,900 meters above sea level.

This municipality is located in Nariño, where approximately 29% of its total area is dedicated to agriculture. The region’s crops are classified according to their productive life as follows: permanent (more than 2 years of production), semi-permanent (between 1 and 2 years of production), and annual (up to 1 year of production). On that basis, 42% of Chachagüí’s crops are permanent (coffee), 15% are semi permanent (sugar cane and plantations) and 20% are annual (corn and bean crops). Although it is clear that there is a great diversity of crops in the municipality, Chachagüí’s economy relies exclusively on some primary products such as coffee, beans and corn. The rest of the products are intended mainly for self-consumption and are occasionally commercialized.

The temperature at which coffee grows in this region ranges between 18°C and 20°C. Its trees are supplied from the waters of the rivers Pasto and Juanambú. Under these environmental conditions, producers carry out a milling process, pulping the ripest cherries, and then placing them in fermentation tanks for 15 to 18 hours. The drying process takes place either in patios or in parabolic drying beds, and it depends on the experience and knowledge of each individual producer and their economic capacity, due to the fact that building and maintaining a parabolic dryer implies higher costs.

Because of this, the drying process for each producer can vary between 5 to 10 days, depending on the chosen technique. Although these drying processes are different, they are both functional and efficient, as the final quality depends on the expertise and commitment of each coffee grower to every single one of the stages.
